Day 113: Cobers

When Seth gets out of the bathtub, he immediately starts shouting, "Cobers! Cobers!" As soon as I get him dried off, he runs to our bedroom and climbs on the bed. He wants me to throw the "cobers" (covers) over him. William is not far behind him, and the two of them play and giggle and go a bit wild. It's funny how something that gets repeated twice automatically becomes part of the routine--something that cannot be missed. That's okay. The smiles and giggles are totally worth it.

Dinner:
Spice-rubbed salmon with avocado salsa and broccoli
We got home a little before 6:00 today, and I managed to balance dinner prep with time outside to play with chalk, blow bubbles, and run around. Luckily, Daddy showed up just in time for me to finish dinner and get it served. We ate at 7:10. Neither of the boys liked the fish, so I gave them both string cheese. Seth ate all his broccoli and all his cheese. William ate all his broccoli, a few bites of cantaloupe, and half of his cheese. No dessert, but neither of the boys protested. I made the avocado salsa (recipe below) with canned tomatoes (garlic and basil flavored). It was pretty good, but it didn't need the extra salt. I also added cilantro.

I also took the blueberries and strawberries out of the fruit salad and froze them. Then I salvaged the watermelon and cantaloupe, and threw out the grapes. At least I didn't waste the whole fruit salad! Tomorrow night, I should be able to finish up the salsa from tonight with the quesadillas, and I'll also use up some cilantro. I'm making progress!

Avocado salsa:

  • 1  cup  chopped plum tomato (about 2)
  • 2  tablespoons  finely chopped onion
  • 2  teaspoons  fresh lime juice
  • 1/4  teaspoon  salt
  • 1/8  teaspoon  freshly ground black pepper
  • 1  avocado, peeled and finely chopped

Your boys are such cuties. And I am glad you posted the avocado salsa recipe -- every time you mention it, I mean to ask for the recipe, but never remember to do so! :) Thanks.
