Day 22: Giddyup

Yesterday was "Texas Day," as part of one of William's classmate's Me Week. They brought in this "horse" and all the kids got to take turns riding. The "horse" was still in the classroom this morning, so William sneaked in for a ride. Good thing we took our Me Week early on. I wouldn't want to follow this act!

Dinner:
Black bean quesadillas
I switched up my menu plan a bit and made the quesadillas tonight. I also didn't quite follow the recipe I had planned to use. Instead, I made one for Seth and me with black beans, corn, spinach, and cheese. (Seth ate almost 1/4th of one.) I made one for Ed with turkey sausage, corn, spinach, and cheese. And William ate leftover wagon wheel pasta, pepperoni, half a cereal bar, and an entire grapefruit.
