Day 28: Meal Prep

I spent some time tonight prepping meals for the rest of this week. I cut half of a pork roast into pork chops for tomorrow night, and the other half into strips for fajitas on Thursday night. I made the marinade for the pork chops. I made the salisbury steaks for Wednesday night, made four hamburger patties to freeze for the future, and divided up two pounds of ground beef for the freezer (for future use also). I also made freezer biscuits. Not bad for one night's work! Of course, after all this work, chances are that no one will actually like any of the meals. But you don't know if you don't try!

Dinner:
Mac-n-cheese with fruit (grapes, blueberries, apples)
The boys sat down to eat around 6:30. William ate all of his dinner. Seth ate most of his mac-n-cheese, and some apples. I ate half an apple, some crackers and hummus while I got dinner ready, and a few bites of mac-n-cheese here and there. Ed made angel hair pasta with pasta sauce. I ate a bowl of cereal around 10:00. Definitely a two-working-parents kind of family dinner!

Wow... great plans for the roast. I looked up the freezer biscuits, super yum.

Plans to make them to go with a Chicken and Fruited, wild rice dish I assembled for the freezer yesterday.

I often shop the discount meat area of the store and then as soon as I get home I recut, trim, and put into marked freezer bags.

It helps that I taught the meat manager's son and he let me know what time of day he marks down

Fringe benefit of my job since I don't get a 401 k match
