Our run of cold and rainy weather has finally given way to spring again. Today was gorgeous. We didn't get outside to play until late in the afternoon, but the boys ended up eating dinner on the deck. There's only a small window of time that we can enjoy the deck in the evenings, though. The sun hits it full-on all afternoon, so it's baking hot once the weather turns really warm. So we'll take advantage of it while we can.
Don't ask why William was wearing his helmet at dinner. I have no idea. He was riding his tricycle earlier, and he didn't want to take it off. I didn't push it. I'd much prefer my kids to wear helmets at ALL times! LOL. (And have you noticed the spots on my camera lens? I tried cleaning the lens with a cleaning cloth, but it didn't work. Is my lens ruined?)
Dinner:
Parmesan Chicken Nuggets with asparagus and watermelon
I ditched the Chinese chicken broccoli dinner in favor of Parmesan Chicken Nuggets. Ed is still feeling bad, and he worked late tonight anyway. Seth has some form of coxsackie (more about that on my other blog), so I didn't figure he'd eat much of anything. And I wasn't even sure William would like the Chinese chicken broccoli. Since I had the time, I cut up two chicken breasts into nuggets and breaded them. I cooked enough for tonight's dinner and froze the rest. Once again, they were AWESOME. And both boys ate them. William ate all of his dinner. Seth ate the chicken and watermelon but not the asparagus. They both ate an ice cream sandwich for dessert. Along with the chicken nuggets that I froze, I put the three remaining chicken breasts in a freezer bag with Caesar dressing as a marinade. I figured that would come in handy for grilling one of these days.
